Homemade Butter Chicken

Ingredients

  • 500g chicken fillet, diced
  • 1 cinnamon stick
  • 1 teaspoon whole cumin seeds
  • 1 teaspoon chilli powder (adjust to taste)
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1/2 teaspoon turmeric powder
  • 50g butter
  • 200ml heavy cream

Instructions

Marinate the Chicken (Optional):

  • In a bowl, mix the diced chicken with ginger paste, garlic paste, chilli powder, turmeric powder, and a pinch of salt. Let it marinate for at least 15 minutes.


Cooking the Chicken:

  • Heat the butter in a pan over medium heat.
  • Add the cinnamon stick and whole cumin seeds. Sauté for a few seconds until fragrant.
  • Add the marinated chicken (or if you opted not to marinade add chicken and all the spices), and cook until it's lightly browned and cooked through, about 8-10 minutes.


Preparing the Sauce:

  • Reduce the heat to low.
  • Pour in the heavy cream, stirring continuously.
  • Adjust salt to taste.
  • Simmer gently for another 5-7 minutes until the sauce thickens slightly and the flavours meld together.
