Homemade Paneer Cheese

Ingredients

  • 1 gallon (4 litres) whole milk
  • 1/4 cup lemon juice or vinegar
  • Cheesecloth

Instructions

  • Heat the milk in a large pot over medium-high heat, stirring occasionally to prevent sticking.
  • Once the milk comes to a very gentle simmer, reduce the heat to low.
  • Add the lemon juice or vinegar, stirring continuously until the milk curdles and separates into curds (white solids) and whey (yellowish liquid).
  • Line a colander with cheesecloth and place it over a large bowl or in the sink.
  • Pour the curdled milk into the cheesecloth-lined colander, allowing the whey to drain away.
  • Rinse the curds under cold water to remove any residual lemon juice or vinegar.
  • Gather the edges of the cheesecloth and twist it to squeeze out excess whey.
  • Place a heavy object (like a cast-iron skillet) on top of the paneer bundle to press it for 10 to15 minutes
  • Place in the fridge for at least 2 to 4 hours.
  • Unwrap the paneer cheese and cut it into cubes or slices. Your homemade paneer cheese is ready to use!
